These are my best banana muffins to date!

Recipe Ingredients for Banana Coconut Muffins

1 3/4 cup flour
1/2 cup brown sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 cup mashed banana
1/3 cup coconut milk
1/4 cup butter, melted
1 egg, beaten
1 tsp vanilla
1/2 cup chopped pecans
1/2 cup coconut

Recipe Directions for Banana Coconut Muffins

  1. Preheat oven to 425.

  2. Prepare muffin pan.

  3. Mix all dry ingredients and set aside.

  4. Mash banana. Add egg, vanilla and coconut milk. Mix well.

  5. Stir liquid into the dry ingredients, mixing only until moistened. Fill the muffin cups generously to make 10 muffins. Fill less to make 12.

  6. Bake about 14 minutes.
