Recipe Ingredients for Banana Coconut Loaf

1 cups Organic Coconut Flour
1/4 cup spelt flour
8 oz greek yogurt
3 eggs
1 tsp sea salt
2 tsp baking soda
2 tbsp coconut oil
1/3 cup maple syrup
2 ripe bananas
1/3 cup unsweetened coconut
1/2 cup chopped walnuts

Recipe Directions for Banana Coconut Loaf

  1. Mix flour, salt and soda together.

  2. In a separate bowl mix eggs, maple syrup, yogurt, banana and coconut oil and beat with electric mixer until blended.

  3. Add wet ingredients to dry and fold in coconut and nuts.

  4. Pour into parchment paper lined loaf pan.

  5. Bake at 350 for one hour or until toothpick inserted in centre of loaf comes out clean.

  6. Keep in refrigerator for 5 days or freeze
