It is like a fruit cake. Really yummy 9 X5 X 3 inch loaf pan

Recipe Ingredients for Banana Coconut Loaf

2 large eggs
1 cup granulated sugar
1/2 cup butter
1 cup bananas
1/2 tsp vanilla
1 1/2 cups flour
1/2 cup coconut
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup pecans
1/2 cup maraschino cherries

Recipe Directions for Banana Coconut Loaf

  1. Mix eggs until light and frothy

  2. Add sugar and melted butter

  3. Beat well

  4. Stir in mashed bananas and almond flavoring (use instead of vanilla)

  5. Combine remaining ingredients and add the wet ingredients in the well of the dry and stir until just mixed

  6. Bake at 350 for 1 hour

  7. Let stand for 10 minutes before removing from pan
