This is a delicious raw vegan dessert. Hardest part of the recipe is getting the meat out of the coconut. Otherwise it is easy to do. The whole fresh coconut is used.

Recipe Ingredients for Banana Coconut Cream Pie (Raw Vegan)

16 oz Coconuts
1 cup Coconut Water
4 medium (7" to 7-7/8" long) Bananas
6 dates(40 g) Dates, Medjool
1 fruit yields Orange Juice
1.5 tsp Vanilla Extract
10 grams Sea Salt
0.12 tsp Turmeric, Ground
2 tbsp Coconut Oil, Unrefined, Organic
1 cup, chopped(125 g) Walnuts, Black, Dried
0.25 cup, packed(165 g) Raisins, Seedless

Recipe Directions for Banana Coconut Cream Pie (Raw Vegan)

  1. Clean a whole coconut. Reserve the water from the coconut. You will need at least 1 cup of the water for the pie filling. The meat needs to be cleaned of the brown skin membrane that remains after prying from the shell. This is the most challenging part.

  2. Crust:

  3. Blend walnuts, 1/4 cup shredded coconut meat, 4 dates, 1/4 cup raisins and pinch of salt in high speed blender until sticky crumb texture. Spread in pie pan.

  4. Filling:

  5. Blend remaining ingredients excluding bananas in blender until smooth and creamy adding ice cubes( approx one cup) to keep it cool and from becoming too thick.

  6. Line the pie crust with banana pieces. Cover with the cream mixture. Refrigerate for 2 hours until cream is set up. Serve cold.
