Banana Bread with Coconut flakes.

Recipe Ingredients for Banana Coconut Bread

2 cups flour
1/2 cup sugar
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp baking soda
1 1/2 tsp baking powder
3 tbs dried coconut
1/2 cup extra virgin olive oil
1/2 cup honey
2 egg whites (beaten)
4 mashed bananas

Recipe Directions for Banana Coconut Bread

  1. Oven set to 350. Baking time 55-65 minutes.

  2. Mix all dry ingredients in Medium bowl. Beat two egg whites in a separate bowl till fluffy, mash 4 big banana's in with the egg (or separate, then add to eggs) then add all other wet ingredients and mix very well. Add wet to try and combine until smooth (gonna be a bit chunky due to banana consistency). Place in a lightly buttered bread pan/stoneware. Add a sprinkle of cinnamon and sugar to the top, then place in oven. Fully cooked when toothpick comes out clean.
