Recipe Ingredients for Banana Coconut Bread

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 tsp nutmeg
1 tsp cinnamon
2 tbsp butter
3/8 cup applesauce, unsweetened
6 oz (3/4 cup) light brown sugar
2 eggs, beaten
4 oz (1/2 cup) flaked coconut
2 1/3 cups bananas, mashed, overripe
1/8 cup dark brown sugar

Recipe Directions for Banana Coconut Bread

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

  2. In a large bowl, combine flour, baking soda, salt, cinnamon and nutmeg.

  3. In a separate bowl, cream together butter, applesauce and 3/4 cup brown sugar. Stir in eggs and then gently stir in mashed bananas until mixed.

  4. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

  5. Sprinkle remaining brown sugar over top of batter.

  6. Bake in preheated oven for 60 to 70 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
