Recipe Ingredients for Banana coconut blondies

2 medium (7" to 7-7/8" long) Bananas
1/2 cup Flour, All Purpose
1/2 cup Oat Flour
3/10 cup Molasses, Blackstrap
3/4 tsp Baking Powder
1/2 tsp Baking Soda
1/4 cup Butter
1 tsp Vanilla Extract
0.33 cup Milk, Nonfat, Fluid
1 large Egg, Whole
2 oz Coconut

Recipe Directions for Banana coconut blondies

  1. Preheat oven to 350 degrees. Mix all dry ingredients in a mixing bowl. Blend all wet ingredients in a blender and add to dry mix. Stir until "just mixed," pour into greased 8x8 baking pan, sprinkle generously with cinnamon and sugar (optional, but strongly suggested!) and bake for 30-35 minutes.

  3. Raisins, nuts, chocolate chips, berries, and cut-up chunks of banana or other fruits can all make excellent additions to this recipe. Simply add them to the mix when you add the wet ingredients to the dry mix.

  4. Blackstrap molasses can be substituted for whatever sweetener you like (maple syrup, rice syrup, agave nectar, fancy molasses, sugar) or omitted altogether. If the recipe is too dry, add some more pureed banana.
