Recipe Ingredients for Banana chocolate and walnut muffins

3 ripe bananas
1/2 cup vegetable oil
2 eggs
1 cup plain flour
1/2 cup caster sugar
1/2 tsp baking soda
1 tsp baking powder
50 g dark chocolate chips
50 g white chocolate chips
50 g milk chocolate chips
50 g walnuts

Recipe Directions for Banana chocolate and walnut muffins

  1. Preheat oven to 400F. Line a standard muffin tin with muffin cups.

  2. Mash bananas and set aside.

  3. Pour oil into a bowl and whisk in eggs.

  4. Put flour, sugar, baking soda and baking powder into a large bowl and mix in egg and oil mixture, followed by the mashed bananas.

  5. Fold in butterscotch chips and place equal quantities in the prepared muffin tin (Tip: Try an ice cream scoop and a spatula!) and bake for 20 minutes.
