Recipe Ingredients for Banana Chocolate Muffins

2 c whole wheat pastry flour
1 tsp baking soda
1/2 tsp cinnamon
3/4 tsp baking powder
3/4 tsp salt
1/3 c Vanilla
1 1/2 tsp pure vanilla extract
1 1/2 T lemon juice
2 g Stevia
2 c mashed banana
2/3 cup semi sweet chocolate chips
1/2 cup pitted dates

Recipe Directions for Banana Chocolate Muffins

  1. Preheat oven to 350 F.

  2. Combine dry ingredients, and mix well.

  3. Soak dates in hot water and puree, add rest of wet ingrediants.

  4. Combine wet ingredients and mix into dry. Mix by hand, and don?t overmix.

  5. Pur into 12 muffin tins. Not sure on cooking time.

  6. (Tip: If the top is cooked but the inside is still gooey, put tin foil over the top and continue to cook.)

  7. Store in fridge.
