Recipe Ingredients for Banana chocolate muffins

3/4 cup sugar
1 egg
1/2 cup olive oil
1 cup mashed bananas (2 med.)
3 tbsp. milk
1 c. whole wheat flour
1 c. unbleached flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup chocolate chips

Recipe Directions for Banana chocolate muffins

  1. Preheat oven to 375 degrees. Grease and flour muffin pans or line with papers.

  2. In the bowl of an electric mixer, combine butter and sugar; beat until thoroughly blended. Add the rest of the ingredients except walnuts to the electric mixer bowl and beat at low until dry ingredients are moistened. Turn to high and beat until smooth. Blend in walnuts by hand.

  3. Spoon batter into muffin cups until 2/3 full. Bake at 350 degrees for 15-17 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and allow to cool in pan for 10 minutes before turning out.
