Banana chocolate chip muffins with flax

Recipe Ingredients for Banana chocolate chip muffins

1 1/4 c. quick-cooking oatmeal
1 c. flour
1/3 c. granulated sugar
1 tbsp. baking powder
1/2 tsp. salt
1 c. milk
1 egg, beaten lightly
1/2 c. apple sauce
1 tbs oil
2 mashed bananas
1/2 tsp vanilla
1/2 c chocolate chips
1/4 c flax seed

Recipe Directions for Banana chocolate chip muffins

  1. Preheat oven to 425F.

  2. Mix together oats, flour, sugar, baking powder, salt and flax. Stir in milk, egg and oil, stirring gently until just moist. Fold in chocolate chips.

  3. Fill greased or paper-lined muffin pans 2/3 full with batter.

  4. Bake for 20 to 25 minutes or until a toothpick inserted in center of a muffin comes out clean.

  5. Yield: 1 dozen.
