These are a great way to use up over ripe bananas.

Recipe Ingredients for Banana Chocolate Chip Muffins

1 3/4 cups all purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/2 cup vegetable oil
1/2 cup vanilla yogurt
1 teaspoon vanilla extract
3 medium ripe bananas, mashed
3/4 cup semisweet chocolate chips

Recipe Directions for Banana Chocolate Chip Muffins

  1. Large bowl, combine flour, sugar, baking powder, baking soda and salt, set aside.

  2. Smaller bowl, combine egg, oil, yogurt and vanilla. Stir into dry ingredients until moistened.

  3. Carefully mix in banana and chocolate chips.

  4. Spray muffin tins with non stick cooking spray, fill with batter half full.

  5. Bake 350 for 22-26 minutes or until toothpick comes out clean. Cool several minutes before taking out of pans.
