Recipe Ingredients for Banana Chocolate Chip Muffins

1 1/2 cup wheat, hard white
2 tablespoons brown sugar
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup applesauce, unsweetened
8 oz fat free vanilla yogurt
1/4 cup egg substitute
3/4 cup chocolate chips
1 banana, chopped
1/2 teaspoon cinnamon

Recipe Directions for Banana Chocolate Chip Muffins

  1. Preheat oven to 400* and line 12 muffin tin cups with paper or spray with cooking spray.

  2. Sift together flour, sugar, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix applesauce, yogurt, chopped bananas, and egg substitute. Fold the wet ingredients into the dry ingredients. Then fold in the chocolate chips.

  3. Divide the batter among the muffin cups. They will be full.

  4. Bake on the middle rack for 20-25 minutes or until a tester comes out clean. Enjoy!
