Makes 12 servings



This recipe makes 12 muffins or 1 loaf. These are a favourite in our home. Because there is no oil or butter, it is very low in fat. I substitute some of the sugar with Splenda sugar substitute to make it lower in calories as well.

Recipe Ingredients for Banana Chip Muffins

1/2 cup all purpose flour
1/2 cup whole grain flour
1/2 cup rolled oats
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Splenda sugar substitute
1/4 cup sugar
1 egg
2 cups mashed banana
1/2 cup chocolate chips

Recipe Directions for Banana Chip Muffins

  1. Mix all dry ingredients together in large bowl and set aside.

  2. Beat egg and mix with mashed banana.

  3. Mix banana & egg mixture with dry ingredients just until moistened.

  4. Bake at 350 degrees F for 30 minutes for loaf, and 12-15 minutes for muffins.

  5. Makes 1 loaf and 12 muffins.
