Recipe Ingredients for Banana-Chia Bread

1 c. whole-wheat pastry flour
3/4 c. fiber one, ground
1/4 c. ground flaxseed, chia seed
1 1/4 tsp. baking powder
1/2 tsp. baking soda
3 bananas, mashed
1/4 c. honey
3 tbsp skim milk
1 egg white
3/4 tsp. vanilla

Recipe Directions for Banana-Chia Bread

  1. Preheat oven to 350*F. Grease and flour a loaf pan.

  2. In a medium mixing bowl, combine first four ingredients (flour through soda). Set aside. In a large mixing bowl, combine mashed bananas, honey, milk, egg, and vanilla. Add dry ingredients. Do not overmix.

  3. Pour into prepared bread pan. Bake for 50-60 minutes until toothpick comes out clean, cool 10 minutes in pan before removing and slicing.
