A low-fat banana bread flavored with chai tea. Serve it with some milk... or chai tea! Makes 2 loaves.

Recipe Ingredients for Banana Chai Bread

3 cups all-purpose flour
1/2 cup whole wheat flour
2 tablespoons baking powder
1 teaspoon salt
2 teaspoon cinnamon
1 tsp ground ginger
1 tsp ground cardamom
1 tsp ground cloves
1/2 tsp nutmeg
1 cup white sugar
3/4 cup brown sugar
4 oz cream cheese, softened
4 oz fat free cream cheese, softened
4 eggs
5 medium bananas, over-ripe (about 2 1/2 cups mashed)
5 oz. (about 2/3 cup) chai tea, super-brewed

Recipe Directions for Banana Chai Bread

  1. To make super-brewed tea: soak 4 Chai tea bags in 2/3 cup of just-boiled water for 15 minutes. Tea should still be slightly warm by the time you pour it into the bread batter.

  2. In a medium bowl mix together flour, baking powder, and salt.

  3. Cream together the sugar and cream cheese in a large bowl. Beat in eggs, one at a time, until light and fluffy. Mix mashed bananas and Chai tea into cream cheese mixture. (Add a dash of the dry Chai mix if you want some extra flavor.) Add flour mixture and mix until just incorporated, preferably by hand. Fold in chopped nuts if desired, but do not overmix the batter! Divide mixture into a two 9x5 inch loaf pans.

  4. Bake in a preheated 330 F degree oven for 50-60 minutes. Cool on rack. Remove from pan after 10 minutes, or when bread has cooled enough to handle. Allow bread loaves to finish cooling on rack.

  5. Slice cooled bread and serve, or wrap it with seran wrap and store at room temperature for up to a week. This bread freezes very well if wrapped tightly with seran wrap, then wrapped again with aluminum foil.
