Recipe Ingredients for Banana Carrot Whole Wheat Muffins

2 cup Whole Wheat Flour
30 medium Carrots, Baby
1 medium (7" to 7-7/8" long) Bananas
4 oz Shedd's Spread Country Crock Plus Calcium and Vitamins Soft
0.5 cup, packed Sugars, Brown
1 large Egg, Whole
2 tsp Baking Powder
0.25 tsp Baking Soda
0.25 tsp Salt, Table

Recipe Directions for Banana Carrot Whole Wheat Muffins

  1. Preheat oven to 350 degrees. Grease a 12 cup muffin tin with butter or spray with PAM. Grate carrots and set aside. Mash bananas with fork and set aside.

  2. In mixing bowl, cream butter and brown sugar until fluffy. Add egg and beat well. Stir in the bananas. In small bowl, mix together flour, baking powder, salt and soda. Add flour mixture to banana mixture. Do not overmix! Add carrots, vanilla and nuts and combine carefully. Bake 20 to 25 minutes.
