Muffins with mashed banana's, shaved carrots, and cinnamon.

Recipe Ingredients for Banana Carrot Muffins

3/4 cup all purpose flour
1/4 cup rolled oats
1 tbs baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup mashed bananas
1/8 cup sugar
1/8 cup Truvia
1/2 cup Carrots
1/4 cup unsweetened applesauce
1 egg
1/2 tsp vanilla extract
1 tsp ground cinnamon

Recipe Directions for Banana Carrot Muffins

  1. Combine flour, oats, cinnamon, salt, baking power/soda.

  2. In a separate bowl combine egg, vanilla, applesauce, bananas, carrots, sugar and truvia.

  3. Slowly incorporate dry ingredients to wet.

  4. Fill muffin tins 3/4 of the way full and bake at 350 for 17 minutes.
