there's no sugar, milk, eggs- the bananas and carrots sweeten it enough and with the nuts it could almost be a meal

Recipe Ingredients for Banana Carrot Muffins

1/4 cup margarine, melted
3/4 cup carrots, grated
1 tbsp flaxseed, ground
3 tbsp water
3 bananas, mashed
1 tsp vanilla extract
1 cup whole wheat flour
1/2 cup all purpose flour
1 tsp baking soda
1/3 tsp nutmeg
1/2 tsp baking powder
1/2 cup walnuts

Recipe Directions for Banana Carrot Muffins

  1. Mix flaxseed & water together and let stand 10-15 minutes (this replaces egg)

  2. Preheat oven to 400 F

  3. Add the rest of the ingredients in order

  4. Drop into 12 muffin cups

  5. Bake 20-25 minutes until center of toothpick comes clean
