Can substitute 1/2 cups applesauce for oil. Bake 350 degrees for about 20 - 25 minutes.

Recipe Ingredients for Banana carrot muffins

1 1/2 cups all purpose flour
3/4 cups sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
2 eggs
1 tbsp honey
2 medium bananas
1 cup carrots
1/4 cups canola oil
1/4 tsp grated orange

Recipe Directions for Banana carrot muffins

  1. In large bowl combine first seven ingredient. In a small mixing bowl beat egg yolks until light and lemon-colored. Beat in honey and orange peel. Fold in the mashed bananas, carrots and applesauce. Stir into dry ingredients just until moistened.

  2. In another small mixing bowl beat egg shites on high until stiff peaks form, fold into batter a third at a time.

  3. Fill greased or paperlined muffin cups two thirds full.
