Recipe Ingredients for Banana & Carob Muffins

1 cup all-purpose flour (Eagle Mills Ultragrain)
1/2 cup quick oats, ground
1 1/2 tsp baking powder
1/2 tsp baking soda
2 tsp ground cinnamon
1/8 tsp ground cloves
1/8 tsp ground ginger
2 tsp vanilla extract
2 egg whites
1 tbsp ground flax seed
4 medium bananas, mashed
1/4 cup brown sugar
2 tbsp splenda
1/4 cup unsweetened applesauce
2 tbsp Country Crock Light Spread
1/4 cup carob chips

Recipe Directions for Banana & Carob Muffins

  1. Preheat oven to 350. Spray muffin pan with PAM; set aside.

  2. In a large bowl combine flour, ground oats, baking powder, baking soda, cinnamon, cloves, ginger, and carob chips; set aside.

  3. In a small bowl combine egg whites and flax; lightly beat and set aside.

  4. In a medium bowl, combine mashed bananas, brown sugar, splenda, applesauce, and butter spread. Add egg mixture.

  5. Lightly fold wet ingredients into flour mixture until just combined (batter should be lumpy). Fill muffin cups 3/4 of the way.

  6. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 5 minutes. Remove from pan and contiue cooling on wire rack.
