A recipe adapted with coconut fat in the place of butter. Should be entitled banana bread but in my opinion this is a cake.

Recipe Ingredients for Banana Cake (suitable for lacto-ovo vegetarians only)

210 g white sugar
220 g white flour
35 g wholewheat flour
113 g Coconut Oil
2 eggs
1 tsp vanilla extract
3 bananas
6 g salt
6 g baking soda

Recipe Directions for Banana Cake (suitable for lacto-ovo vegetarians only)

  1. Set oven to 180 degrees Celsius. If your butter/fat is not liquid make sure to put it in a small pan to melt on a low heat now.

  2. Using a small bowl (1.5 litre volume is fine) mash up your three very ripe bananas with the sugar. I like to wait until my bananas are ripe with black specks and smell very much of banana! A potato masher works well for this. If you need more liquid for easier mashing add the melted butter/fat. This should not be too hot if you melted it gently enough.

  3. Add in two eggs and a teaspoon of vanilla extract. I have also used almond extract instead and it tasted lovely. Mix it up.

  4. In another bowl (1 litre volume should be enough) mix up the flour (both types), the salt, and the baking soda very well. You need that soda to be dispersed thoroughly.

  5. Add the contents of the dry bowl to the wet goop in the other bowl and mix well but be careful not to overdo it as you can knock out the air and get heavy hard bread.

  6. Grease or use baking paper to line a bread form (mine is approximately 30 cm by 10 cm with a depth of about 8 cm) and pour in the mixture.

  7. Place in the centre of the oven and time for 60 minutes.

  8. Test with a clean knife to see if it is fully baked in the middle: Stab in the middle and slowly remove the blade. If the blade is mostly clean then it is done. If there is a wet smear then you need to put the tin back in the oven for maybe 10 or 15 minutes more.

  9. Allow to cool a little before removing from the form. No need to wait until it is completely cold though! Enjoy warm slices with some treacle.

  10. You can store this like any other cake. Eat within 3 or 4 days.
