Recipe Ingredients for Banana Cake

3 medium (7" to 7-7/8" long) Bananas
2 cup Wheat Flour, White, All-purpose, Unenriched
1 serving Baking Soda
1 Teaspoon Baking Powder
0.25 tsp Salt, Table
0.75 cup, packed Sugars, Brown
1 medium Egg, Whole
0.5 cup Milk, Nonfat, Fluid
0.25 cup Vegetable Oil, Canola
1 tsp Vanilla Extract

Recipe Directions for Banana Cake

  1. Heat oven to 350 degrees. Coat inside of 9-inch cake round cake pan with nonstick cooking spray.

  2. Whisk flour, baking powder, baking soda and salt in a small bowl. Place brown sugar, egg in a large bowl; beat with a mixer at medium speed until fluffy. Add oil, milk, mashed banana and vanilla extract and mix until well blended. Gradually mix in flour mixture until just moist.

  3. Pour batter into cake pan and bake for 30 minutes. Cool on a wire rack.

  4. For the frosting, place sugar, cream cheese and vanilla in a medium bowl and mix with an electric mixer until smooth. Spread frosting on top of cooled cake.
