Recipe Ingredients for Banana Cake

1 1/2 cup bananas
2 tsp. lemon juice
3 cups flour
1 1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup butter, unsalted, softened
2 1/8 cups sugar
3 large eggs
2 tsp. vanilla
1 1/2 cup buttermilk
8 oz. cream cheese, low fat
1 tsp. vanilla
3 1/2 cups powdered sugar
1/2 cup butter

Recipe Directions for Banana Cake

  1. Smash bananas and mix with lemon juice. Set aside.

  2. Sift flour, baking soda and salt and set aside.

  3. Cream 3/4 c. butter and sugar. Add eggs, one at a time, mixing well after each. Add vanilla and mix well.

  4. Add buttermilk and flour mixture, alternately, with butter/sugar mixture.

  5. Add bananas and mix well.

  6. Pour into greased and floured 9-inch round pans (3).

  7. Bake at 275 degrees for 1 hour and 10 minutes.

  8. Remove from oven and place directly into freezer for 45 minutes.

  9. Frosting: Combine 8 oz. cream cheese, 1 tsp. vanilla, 3 1/2 cups powdered sugar, and 1/2 cup butter till creamy. Frost cake.
