Recipe Ingredients for Banana Bundt Cake

2 1/2 cups whole wheat pastry flour
2 tsp baking powder
1 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp cardamom
3/4 cup brown sugar
2 eggs
2 egg whites
1 cup bananas
3/4 cup unsweetened applesauce
1/3 cup canola oil
1 tsp vanilla extract

Recipe Directions for Banana Bundt Cake

  1. Preheat oven to 350. Prepare 10" Bundt pan with cooking spray.

  2. Sift flour with baking powder, salt, spices into a large bowl. Add brown sugar + mix well.

  3. Combine egg yolks, bananas, applesauce, oil, and vanilla, and mix well. Add banana mixture to the dry ingredients and stir just until evenly blended.

  4. Beat egg whites until stiff but not dry. Gently fold into batter and pour into pan.

  5. Bake for about 60 min, until cake begins to pull away from the sides of the pan and a knife inserted in the center comes out clean. Cool on a rack for 10 min and then invert onto a plate.
