Basic recipe, swap banana and walnuts for other variations: Apple: add 2 cups grated apple and 2tsp grated lemon peel. To dry add 1/2 teaspoon cinnamon. Carrot: add 2 cups grated carrot. When combined add 1 teaspoon cinnamon, 1 teaspoon mixed spice and raisins and chopped pecans. Courgette: add 2 cups grated courgette. When combined add 1 teaspoon cinnamon, 1 teaspoon cardamom (and raisins and chopped nuts).

2 large eggs
1/2 cup vegetable oil
1/2 cup brown sugar
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cups walnuts
1 1/2 cups banana

  1. Mix wet ingredients: eggs, oil, sugar and vanilla (stir in fruit).

  2. Sift dry ingredients together (include any spices)

  3. Combine the wet and dry (and any other final ingredients like nuts/choc chips) then put into cases
