Banana-bread muffins with bran and walnuts

Recipe Ingredients for Banana breakfast muffins

3 eggs
150 g flour
1 cup bran
150 g sugar
60 g butter
250 g banana pulp
1 tsp mixed spice
2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
60 g walnuts

Recipe Directions for Banana breakfast muffins

  1. mix all dry ingredients together in a bowl

  2. add in eggs, banana pulp and butter and mix thoroughly

  3. spoon into muffin cases and bake at 180 degrees C for 30mins or until a knife comes out clean
