These muffins are very moist and accompany a cup of coffeee perfectly. Once cooled completely you can place in a Ziplock freezer bag. You can then grab one each morning while your coffee is brewing.

Recipe Ingredients for Banana Breakfast Muffins


Sift together in small bowl:
1 1/2 cups Whole Wheat Pastry Flour
1/2 cup All Purpose Flour
2 tablespoons Milled Flax Seed
3 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon

In large bowl combine:
1 1/2 cups Splenda no calorie
1/2 cup packed Brown Sugar
1/2 cup Extra Virgin Olive Oil
3/4 cup Unsweetened Apple Sauce

Blend In:
1 teaspoon Vanilla extract
2 large Bananas

Beat In:
4 Eggs, one at a time

Fold In:
1/2 cup ground walnuts
1/4 cup coconut

Recipe Directions for Banana Breakfast Muffins

  1. Place spoonfuls of batter into a large muffin pan which has been sprayed with Pam cooking spray (or line pan with muffin liners). Only fill cups 2/3 full.

  2. Bake in preheated 350F degree oven for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  3. Once baked, allow muffins to cool on cooling rack. Enjoy!
