Great bread! Ran out of eggs, so used applesauce, 1/4 cup per egg, and added more soda. Recipe originally from Better Homes and Garden old cook book

Recipe Ingredients for Banana Bread used with Spenda and applesauce

1 3/4 cups flour, all-purpose
2/3 cup Splenda
3 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 cup banana, ripe, mashed (2 to 3 medium bananas)
1/3 cup butter
2 tablespoons milk
1/2 cup applesauce(substitute for 2 eggs)
1/4 cup nuts, chopped

Recipe Directions for Banana Bread used with Spenda and applesauce

  1. In a large mixer bowl combine 1 cup of the flour, the Splenda, baking powder, baking soda, and salt. Add mashed banana: butter; and milk. Beat with an electric mixer on low speed till blended, then on high speed for 2 minutes. Add applesauce and remaining flour; beat till blended. Stir in nuts.

  2. Pour batter into a greased 8x4x2 inch loaf pan. Bake in a 350 degree oven for 55 - 60 minutes or till a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from the pan; cool thoroughly on a wire rack. Wrap and store overnight before slicing
