The "serving" for this banana bread is 2/3 of a 5" by 3" loaf. It should be made with the nastiest, blackest bananas possible. The only indication that a banana shouldn't be used is if it is still over 50% yellow - or if it is black AND dried out. Full length brown/black gives the most intense flavor. This recipe is vegetarian but not vegan.

Recipe Ingredients for Banana Bread

1 cup sugar
1 teaspoon salt
3 teaspoons baking powder
1/2 cup milk
1 teaspoon baking soda, mixed into the milk
1 cup banana, overripe (black) and mashed (about 2.5 bananas)
2 1/2 cups flour
1/2 cup shortening, melted
2 egg yolks

Recipe Directions for Banana Bread

  1. Mix.

  2. Pour into small (5" x 3") aluminum loaf pans. Makes about 4 loaves if pan is filled 2/3 full.

  3. Bake at 325 for 45 minutes. Verify that it is cooked through - wooden toothpick comes out clean.

  4. Larger loaf pans can be used but tend to dry out on the edges while not fully cooking in the middle.
