Recipe Ingredients for Banana Bread

2 cups all-purpose flour
1 tsp baking soda
1/2 cup margarine Smart Balance Light
1 cup sugar
2 eggs
2 bananas, very ripe, mashed
1/3 cup skim milk
1 tsp lemon juice
1/2 cup pecans, chopped

Recipe Directions for Banana Bread

  1. Sift flour and soda together.

  2. Cream margarine and gradually add sugar. Add eggs and bananas and blend thoroughly.

  3. Combine milk and lemon juice.

  4. Slowly and alternately, fold in flour mixture and milk mixture, blending well after each addition.

  5. Stir in nuts.

  6. Pour batter into 9 x 5 x 3-inch baking pan, lavishly greased with msrgarine.

  7. Bake in a preheated 350-degree oven for 1 hour, or until the bread springs back when lightly touched in the center.
