Not light...but a good use for overripe bananas. You can add walnuts or pecans if you like.

Recipe Ingredients for Banana bread

2 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
3/4 cups unsalted butter, melted and cooled
1 cups sugar
4 bananas
1 tsp vanilla
2 eggs

Recipe Directions for Banana bread

  1. Mix flour, baking soda and salt together in a small bowl.

  2. Mash two bananas in another small bowl leaving some texture.

  3. Using an electric mixer, beat remaining bananas and sugar for three minutes of until light and fluffy.

  4. Beat in eggs, butter and vanilla.

  5. Add dry ingredients and mix only until incorporated.

  6. Fold in remaining banana.

  7. Pour batter into a greased loaf pan.

  8. Bake at 350 degrees for 1 hour and 15 minutes.

  9. Let cool 10 minutes before removing from pan.
