This is an almost healthy version of banana bread.

Recipe Ingredients for Banana Bread

1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
1 tbsp Splenda
1 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
1/2 cup Egg Beaters
3 bananas, ripe mashed
1 1/4 cup unsweetened applesauce
3 tbsp soy milk, lowfat
2 tsp vanilla
1/2 cup ground walnuts
1/4 tsp ginger
1 tsp cinnamon
1 tbsp wheat germ
1 tbsp flax seeds

Recipe Directions for Banana Bread

  1. Beat the eggs with sugar. then add other wet/liquids to eggs/sugar mix, beat after each addition. Mix all dry ingredients together and slowly beat into wet mixture until blended.

  2. Stir in the walnut mixture.

  3. Bake in a 8 x 4 loaf pan (I spray with vegetable oil lightly) and bake at 350 for 1 hour.

  4. Note: I use a mini chopper/processor to grind together the walnuts, wheat germ and flax seeds.
