I had used whole wheat flour instead of all purpose flour because the all purpose flour is refined starch so it would have less fiber. The recipe consists of a bit of butter so which is high in fat but per serving it is not much. The bread makes for a healthy dessert and can be served alone or with other desserts.

Recipe Ingredients for Banana Bread

4 cups whole wheat flour
2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
1 1/2 cup brown sugar
4 eggs, beaten
4 2/3 cups bananas

Recipe Directions for Banana Bread

Preheat oven to 350 degrees. In a large bowl, mix the flour, baking soda and salt. In another bowl, mix together butter and brown sugar. Stir in eggs and mashed bananas into the butter and brown sugar. Stir the banana mix into flour mix. Pour batter into prepared loaf pan. Bake in preheated oven for 60 to 65 minutes. Let the bread cool in pan for 10 minutes.
