Banana bread recipe from KitchenAid manual. Recipe calls for nuts, I substituted cranberries.

Recipe Ingredients for Banana Bread

1/3 cup butter
1/2 cup sugar
2 eggs
1 1/4 cups white flour
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 teaspoon salt
2 bananas, mashed
1/2 cup cranberries, dried

Recipe Directions for Banana Bread

  1. Mix butter and sugar in bowl. Beat in eggs. Combine flour, baking powder, baking soda, and salt in separate bowl. Add half of flour mixture and half of mashed banana to butter/sugar/eggs mixture. Mix for 30 seconds, add remaining flour and banana and mix for another 30 seconds. Add cranberries, mix for 15 seconds.

  2. Pour mixture into greased and floured 9x5x3" baking pan. Bake at 350 F for 40-45 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes in pan, then remove from pan and cool completely on wire rack.
