Adapted to decrease oil, add fiber.

Recipe Ingredients for Banana Bread

1/4 c olive oil
4 med bananas
1/4 c soy milk
1 t vanilla
2 c whole wheat pastry flour
1 1/2 t baking powder
1 t salt
1 t baking soda
1 c brown sugar
1 c chopped pecans
1/2 c flax seed

Recipe Directions for Banana Bread

  1. Mash over ripe bananas. Add oil, milk and vanilla, mix well.

  2. Combine flour, baking powder, salt, baking soda, and sugar.

  3. Add to banana mix. Mix well

  4. Pour into well oiled bread pan.

  5. Bake 325 degress, 45 min.
