Recipe Ingredients for Banana Bread

1/2 cup unsalted butter
2/3 cup brown sugar
1 teaspoon vanilla
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cups ripe bananas, mashed
3 tablespoons apricot jam
1/4 cup honey
2 large eggs
2 cups Whole Wheat Flour

Recipe Directions for Banana Bread

  1. Preheat oven to 325 F. Lightly grease 9" x 5" loaf pan.

  2. In large bowl, combine butter, sugar, vanilla, cinnamon, nutmeg, baking soda, baking powder, and salt beating till smooth.

  3. Add mashed bananas, jam, honey, and eggs, again beating till smooth.

  4. Add flour, the walnuts (if using), stirring just until smooth.

  5. Spoon into prepared loaf pan, smoothing top. Let rest at room temp 10 minutes.

  6. Bake 45 min. then gently lay a piece aluminum foil across top to prevent over-browning.

  7. Bake additional 25 minutes. Remove from over. Check for doneness by inserting toothpick. If not done, bake additional 5 min or until it gets done.

  8. Allow to cool 10 minutes in pan. Remove from pan and cool completely on rack.
