Easy recipe for when you've got ripe bananas around.

Recipe Ingredients for Banana Bread

8 tbsp unsalted butter
1/2 cup splenda
2 eggs
3 medium bananas, ripe
1 tsp baking soda
1/2 tsp salt
2 cups flour

Recipe Directions for Banana Bread

  1. Preheat oven to 375. Grease a 9 inch loaf pan.

  2. Meanwhile, cream together butter and sugar.

  3. Add eggs, mixing well after each addition. Mix in the bananas, making sure they are significantly reduced in size. It is ok if small chunks of banana remain but they should be no larger then 1/4 inch.

  4. Next, mix in the baking soda and salt. Add in the flour and combine until all of the ingredients are incorporated into a smooth mixture.

  5. Pour batter into loaf pan and place in oven for 15 minutes. After 15 minutes, reduce the heat to 350 and bake for 45 minutes or until a tooth pick inserted in the center comes out clean.

  6. Remove from pan and place on a wire rack to cool. (Be sure to remove from the pan, otherwise the bottom will become soggy!)
