Easy, quick and simple. Makes 1 large or 2 small loves, 12 servings.

Recipe Ingredients for Banana Bread

1 cup mashed banana
1/2 cup margarine
1 1/4 cup flour
1 cup brown sugar
1/2 tsp salt
1 tsp baking soda
2 eggs

Recipe Directions for Banana Bread

  1. Cream together shortening and sugar.

  2. Add mashed banana and eggs, mix well.

  3. Add dry ingredients. Mix thoroughly but avoid over-mixing (will cause loaf to rise too much and be full of holes)

  4. Pour batter into greased and floured loaf pan. Bake at 350F for 50 - 60 minutes.

  5. Turn out of pan and cool on wire rack before wrapping. Can be frozen.
