From company's coming Light cookbook - I changed 1/4 cup margarine to 1/4 cup unsweetened applesauce. I hope it turns out - it will drop the calories from 153 and fat from 5.4

Recipe Ingredients for Banana Bread

1 cup banana
1 tsp baking powder
1/4 cup unsweetened applesauce
1 cup brown sugar
2 eggs
2 cups flour
1 tsp baking soda
1/4 tsp salt

Recipe Directions for Banana Bread

  1. Mash bananas in small bowl. Add baking powder and set aside

  2. Cream applesauce, sugar and eggs. Beat till smooth. Add banana mixture

  3. Mix flour, baking soda and salt in measuring cup, then add slowly to wet ingredients.

  4. Add in walnuts (if desired)

  5. Pour into loaf pan. Bake at 325 for 50 - 60 minutes or until toothpick comes out clean
