Recipe Ingredients for Banana Bread

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp ground cinnamon
1 egg
1 cup mashed bananas
3/4 cup sugar
1/4 cup cooking oil
1 tsp finely shredded lemon peel
1/2 cup chopped walnuts

Recipe Directions for Banana Bread

  1. Grease the bottom and sides of a 8x4x2 inch pan, set aside. In a medium mixing bowl combine the flour, baking powder, baking soda, cinnamon and 1/8 tsp salt.

  2. In another bowl combine the egg, bananas, sugar, cooking oil, and if desired, lemon peel. Add egg mixture all at once to dry mixture. Stir just till moistened. Fold in nuts.

  3. Spoon batter into prepared pan. Bake at 350 for 50 to 55 minutes or until toothpick comes out clean. Cool and remove from pan. Cool another few minutes on wire rack. Wrap and refrigerate overnight before slicing.
