Recipe Ingredients for Banana Bread

3 1/2 cups flour, sifted
3 tsp baking powder
1 tsp salt
1 tsp baking soda
2 cups banana, mashed
2 tbs lemon juice
3/4 cup shortening
1 1/2 cup sugar
3 eggs
3/4 cup milk
1/2 cup walnuts or pecans

Recipe Directions for Banana Bread

  1. Preheat oven to 350

  2. Sift together flour, baking powder, salt, baking soda.

  3. Mash bananas, add lemon juice and mix.

  4. Cream shortening and sugar with electric mixer at medium speed (or with spoon).

  5. Add eggs and beat thouroghly until very light and fluffy. (about 4 minutes).

  6. Add sifted dry ingredients alternately with milk.

  7. Fold in bananas and nuts. Beat after each addition.

  8. Pour into 2 greased 8.5 x 4.5. x 2.5 inch loaf pans.

  9. Bake at 350 degrees for 1 hour or until toothpick inserted at center comes out clean.

  10. Cool in pans for 10 minutes.

  11. Remove from pans and cool on wire rack.

  12. Wrap in foil or plastic wrap and let stand overnight before slicing.

  13. Freezes well.
