Semi-healthy banana bread with omega 3s and Splenda.

Recipe Ingredients for Banana Bread

4 small bananas, ripe
1 3/4 cups all purpose flour
1 tsp vanilla extract
3/4 tsp salt, kosher
9 tbsp smart balance butter blend
1 cup splenda
1/2 tsp baking soda
1 tsp baking powder
2 eggs, omega-3 enriched

Recipe Directions for Banana Bread

  1. Preheat oven to 375.

  2. Grease loaf pan with 3/4 tbsp of butter spread, reserve 1/4 tbsp for the top of the loaf.

  3. Mix dry goods (salt, splenda, flour, baking soda, baking powder) and sift together. Set aside.

  4. Peel bananas and add them to a bowl, mash lightly. Add eggs and vanilla, stir to combine.

  5. Melt butter in the microwave, when cool, add and mix with wet goods.

  6. Combine wet and dry goods, mixing slowly. Batter will be lumpy.

  7. Pour batter into loaf pan and place reserved butter along the center.

  8. Bake for 50 minutes or until done.
