Based on Emril Lagasse's Banana Bread, but adding some whole wheat flour, craisins, and replacing the macadamia nuts with walnuts and replacaing the 2 eggs with 1/2 cup Better'n Eggs.

Recipe Ingredients for Banana Bread

1/2 cup vegetable shortening
1 cup sugar
1/2 cup Better'n Eggs
3/4 cup mashed bananas
1 tsp baking soda
1/2 tsp salt
1/2 cup enriched flour
3/4 cup whole wheat flour
1/2 cup chopped walnuts
60 grams craisins

Recipe Directions for Banana Bread

  1. Preheat oven to 350.

  2. Oil and Flour a 9x5x3 loaf pan

  3. Using an electric mixer, cream the shortening and sugar.

  4. With the mixer running on medium speed, add the Better'n Eggs. Add the bananas and mix well.

  5. Add the baking soda, salt, flour, nuts nd cinnamon and mix thoroughly.

  6. Pour the dough into the prepared pan and bake about one hour or until the center is brown and set.
