Recipe Ingredients for Banana Bread

1/4 cup margarine
3/4 cup sugar
1 1/2 cups ripe banana, mashed
2 large eggs
1/3 cup low fat sour cream
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips

Recipe Directions for Banana Bread

  1. Preheat oven to 350F. Spray an 8x4 inch loaf pan with non-stick spray

  2. In a large bowl, beat the margarine and sugar until well-combined (should have consistency of wet sand). Add the banana, eggs, sour cream (or yogurt), and vanilla and beat until well blended.

  3. Add the flour, baking soda, and salt, and gently stir until just combined. If you are adding nuts or chips, throw them in just before batter is completely blended.

  4. Pour into prepared pan and bake for 70 minutes.
