Really good banana bread. The mini loafs make a really good on the go morning breakfast.

Recipe Ingredients for Banana Bread

2 cups Whole Wheat Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
1/2 tsp Nutmeg
1/2 cup Chocolate Chips
1 cup Walnuts, Chopped
1/4 cup Margarine
1/3 cup Sugar
2 large Eggs
2 cups Bananas, Mashed
1 tbsp Lemon Juice
1 tsp Vanilla Extract

Recipe Directions for Banana Bread

  1. Measure the first 6 ingredients into a large bowl. Mix well, make a well in the centre and set aside.

  2. Cream margarine and sugar into a medium bowl. Add 1 egg at a time beating well after each.

  3. add the remaining ingredients, mix well and add the the well in the flour mixture. Add batter to a well greased loaf pan, or mini loaf pans (as desired). Bake at 350F for 55-60 minutes for a normal loaf pan, or 20-25 minute for the mini loafs.
