A healthy, homey loaf that is perfect for breakfast or, topped with vanilla ice cream, yummy for dessert. You can also convert this recipe into muffins, which travel well in a lunch bag or a brief case.

Recipe Ingredients for banana bread

1 cups all-purpose flour
3/4 cup of whole wheat flour
1/4 cup wheat germ
1/2 teaspoon salt
2 1/4 teaspoon baking powder
3/4 tsp. lemon rind
1/3 cup safflower oil
2/3 cup sugar
2 eggs
1 1/4 cup of banana

Recipe Directions for banana bread

Combine all of the dry ingredients thoroughly in a medium size bowl. Mix banana (about 3) oil and sugar together until well incorporated. Add the 2 large eggs, one at a time along with the lemon rind and some fresh lemon juice. Gently stir in the dry ingredients until just mixed-do not over mix, otherwise the bread will be tough. Bake for 50 to 60 minutes, or until golden
