Bake at 350 for 55 to 60 minutes or until toothpick inserted near the cneter come out clean. Cool for 10 minutes on a wire rack. Remove from the pan; cool throughly on a wire rack wrap and store overnight before slicing.

Recipe Ingredients for Banana Bread

1 3/4 cups flour
2/3 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup banana
1/3 cup shortening
2 tblsp milk
2 eggs

Recipe Directions for Banana Bread

  1. In a large mixer bowl combine 1 cup of the flour, the sugar, baking powder, baking soda and salt.

  2. Add mashed banana, shortening, and milk.

  3. Beat with an electric mixer on low speed until blended, then on high speed for 2 minutes.

  4. Add eggs and remaining flour; beat until blended.

  5. Pour batter into a greased 8x4x2 inch loaf pan.
