Excellent moist banana bread. Nuts may be added as an option. Whenever I make this, people ask for the recipe.

Recipe Ingredients for Banana Bread

1 1/2 cups white sugar
2/3 cup shortening
2 eggs, separated
1 cup banana, mashed
4 T milk, 1%
1 tsp. vinegar
1 tsp. baking soda
1 T water, warm
1 1/2 cups flour
1 tsp. vanilla
1 salt, pinch

Recipe Directions for Banana Bread

  1. Preheat oven to 325.

  2. Hand blend sugar, shortening.

  3. Beat yolk with bananas and add to shortening.

  4. Comgine milk and vinegar, stir into banana mixture.

  5. Dissolve baking soda in water, stir into batter.

  6. Stir in flour, salt, and vanilla.

  7. Beat egg whites until stiff (not dry), fold into batter.

  8. Bake 1 hour.
