This recipe is super yummy and simple to make! And it has a bread-like consistency as opposed to many banana breads that can condense and be too thick. To be more healthy you could use a substitute instead of butter.

Recipe Ingredients for Banana Bread

120 g caster sugar
1/2 tsp salt
360 g self-raising flour
1 large egg
125 ml skim milk
50 g unsalted butter
4 bananas

Recipe Directions for Banana Bread

  1. Preheat the oven to 180C, gas mark 4. Grease a 1kg bread tin with butter/oil/spray.

  2. Put the sugar, salt and self-raising flour into a mixing bowl. Make a well and add the egg, milk and melted butter. Mix well.

  3. Add the chopped bananas to the mixture and fold them in using a tablespoon.

  4. Put the mixture into the loaf tin. Smooth the mixture down with the back of a spoon.

  5. Put the loaf in the middle of the oven for 1 hour.

  6. When cooked the loaf will be risen and golden. Take it out of the oven and put a skewer into it to check it is cooked. If there is any mixture clinging to the skewer return to the oven for another 10mins. Leave to cool for a little before turning the loaf onto a cooling rack.

  7. Eat while still warm :-)
